Not All Diary is Created Equal 

The dairy industry is more complex than most people think.  So in this post, I’m going to introduce you to some of the  controversial practices that some feel (I tend to agree) are compromising the quality of our country’s dairy products.  Then  I’ll tell you what I personally look for in the dairy products that I buy and use for myself and my family. Armed with this  information, YOU can decide what you want to choose for yourself when you’re buying dairy products and keep in mind  that what you buy with your purchasing power affects what the dairy industry produces, so buy wisely, we the public ultimately determine what they choose to produce, because if they cannot sell it they won’t produce it!

The Commercial Dairy Industry (the regular products you buy at the grocery store and even some brands at the  health food stores): 

1. Injects Cows with Synthetic Growth Hormone:  Today, many commercial dairy producers inject bovine (cow) growth hormone (usually called rBGH or rBST) into their dairy  cows to stimulate them to produce more milk than they would naturally.    Why do they do this?    To cut straight to the point, they do it because they make more money per cow.  Where does this hormone come from?    It is created in a lab by genetically modifying bacteria that then produce a synthetic hormone that mimics the cows’ natural  hormone. This synthetic hormone is called rBGH, and its safety is quite controversial. So controversial that the European Union, Canada, Japan, Australia, and New Zealand have made the wise decision to ban the use of rBGH.  The European  Union ALSO bans the IMPORT of dairy treated with rBGH.

2. Feeds Cows Genetically Modified Corn:  The digestive systems of cows are naturally designed to spend the entire day eating fresh grass. However, most  commercial dairy producers do not give their cows access to pasture.  Instead, they are given feed made mostly from  corn, which cows would never eat naturally.  Secondly, the corn has been genetically altered and sprayed with countless chemicals.  Scientific evidence points to a huge array of health consequences that result from the consumption of genetically engineered foods, including food allergies,  cancer, infertility, immune issues, gastrointestinal ailments, organ damage, dysfunctional regulation of cholesterol, and so  many others that the effects of genetically engineered foods would need many of their own articles. Even if the food were not genetically engineered, a grain based diet causes cows to have acidosis (a digestive condition in  cows), liver abscesses, bloat (an inability to properly eliminate digestive gases), and other health problems.  Interestingly, these sick cows’ milk and beef has a different nutrient profile than that of cows that are raised the way nature  intended them to be raised.

The dairy and beef from cows that eat a 100% grass fed (green pasture) diet is very different than that which is produced  from commercially raised cows.  100% grass fed, certified organic dairy contains high levels of conjugated linoleic acid, which is helpful in cases of  cardiovascular disease, high blood pressure, high cholesterol, insulin resistance (a precursor to diabetes), and  inflammation, to name a few.  Grass fed dairy is also higher in natural vitamin E and beta carotene, and has a better  omega 3 to omega 6 fatty acid ratio.  So you may be asking, “How do I get dairy from cows that are grass fed and not treated with rBST?”  The only way to be  sure that you’re getting healthy dairy is to buy 100% grass fed, certified organic dairy.  If the cows are 100% grass fed, and  their pastures are certified organic, they must have access to fresh grass, and they can’t be injected with rBST.  BTW: For people who like steak or hamburgers, the same rules apply to the beef you buy.  Meat from 100% grass fed,  100% grass finished, certified organic cows has higher levels of the above listed ‘good-for-you’ nutrients and a better fatty acid profile.  Bottom line: If you want to eat the best (to protect your health) and you want to support the farmers who are working hard to do things right… then buy dairy and beef products that are 100% grass fed, 100% grass finished, and certified organic

Healthy Drinks

When losing weight and trying to stay healthy we need to remember not only do we need to EAT healthy but DRINK healthy as well. Time to put down the sodas and sugary juices and try the below instead.

1- Water- This is an absolute must drink for those trying to lost weight. Water helps to flush out those bad toxins and keeps you hydrated. If you are tried of the boring taste of water, try adding traditional lemons or limes and to really change things up, add cucumbers. It will be like a liquid salad!

2- Vegetable juice- This drink is low calorie and very filling. You’ll be getting your servings in an easy way. There’s antioxidants, Vitamins A and C, and fiber. It would make a great snack in between breakfast and lunch.

3- Unsweetened coffee- If you need your caffeine fix, don’t pick up a soft drink but a black cup of coffee. Coffee has health benefits like antioxidants. If you don’t like the taste of coffee, try Fruta Vida, which is many more health benefits and provides the same amount of energy.

Tip: Try “watering down” your sugary drinks. If you just worked out and want a sports drink, many of them are loaded with so much sugar that it defeats the workout you just had. Try splitting it. Save half for later in another container and fill the rest up with water. The same sweet taste with half the sugar.

Gluten Free Pound Cake

More and more people are turning towards a gluten free diet.  So I thought this week I’d share with you an easy way to  have your dessert and be gluten free, too!  Here’s a wonderful cake recipe that is moist, dense, and oh so yummy!  This is not an authentic pound cake, but has the density and butteriness of a pound cake.  It will satisfy all of your cake desires.

Here’s what you’ll need:

3/4 cup of organic clarified butter, ghee, or coconut oil (if you only have regular butter, you can use that as a substitute)

1 cup organic raw sugar

4 organic eggs

1/2 cup organic half and half

1 tsp REAL vanilla extract (this is NOT the cheap, artificial vanilla flavoring sold in many grocery stores)

1 1/2 cups organic almond flour

1/2 cup organic coconut flour

1/4 tsp sea salt

2 tsp baking powder

 

Start by preheating your oven to 350 degrees.  Then add the almond flour, coconut flour, sea salt, and baking powder to  a bowl and mix thoroughly.  In a separate bowl, cream together your clarified butter, ghee, or coconut oil with your sugar.   Next, add one egg at a time, incorporating each egg into the butter and sugar mixture before adding the next egg.  Once all four eggs have been incorporated, mix in the half and half and vanilla extract.  When your liquid ingredients are thoroughly  combined, you can slowly add the dry ingredients, mixing the dry ingredients in a little at a time.

Next, put the cake batter  into a greased 9 by 13 inch baking pan and pop it into the oven for 30 minutes.  Remove from the oven, let cool, then serve.  If you’d like to be very decadent, you can take a toothpick, pierce holes in the top spaced about two inches apart, and  drizzle the top of the cake with manuka honey.  Adding honey is optional… this cake is so delicious that it is a stand alone  cake and needs no icing or toppings, similar to a pound cake.

Healthy Homemade ‘Ranch’ Salad Dressing 

Recently, we talked about how the additives and some ingredients in sauces, condiments, and salad dressings may be stalling your progress when you’re trying to lose weight.  Then we gave a quick and easy alternative to one of the most common condiments, ketchup, so that you could avoid the nasty hidden ingredients in store bought ketchup (click here for the recipe).

This week, I’m going to share my yummy homemade ranch salad dressing (it’s as easy as it is yummy).  But before I do, here’s the facts on why you’ll want to replace your store bought ranch dressing with this simple, easy, homemade recipe.

Here’s the facts:

The most popular brand of ranch dressing is Hidden Valley.  Hidden Valley’s ranch dressing ingredient list includes soybean oil, sugar, natural flavors, spices, phosphoric acid, modified food starch, monosodium glutamate (MSG), artificial flavors, disodium phosphate, sorbic acid, calcium disodium EDTA, and disodium guanylate… if you’re looking to exclude the additives and ingredients that have been linked to weight gain, Hidden Valley would not be a good choice.

So, let’s say you don’t want all the chemical additives and MSG that’s in Hidden Valley so you think, “Maybe I’ll try a ‘health food’ store brand instead.”  Ok… then let’s look at the ingredient list of one of the most popular ranch dressings available in the health food market…

Newman’s Own (lots and lots of people absolutely love Newman’s Own salad dressings).  BUT… “We have a problem, Houston!” Why?  Well, let’s look at the unfavorable ingredients on the Newman’s Own ranch dressing label. They are soybean and canola oil, sugar, natural flavors, and spices (ugh!). No worries, because I’m gonna teach you to whip up a great homemade ranch dressing in less than ONE MINUTE!

Here’s the ingredients:

1 cup Whole Milk ORGANIC Straus Yogurt (Straus is my favorite brand)

1-3 Tablespoons ORGANIC Dehydrated Onion Flakes

1 teaspoon ORGANIC Fresh or Dried Dill Sea Salt & ORGANIC Black Pepper to taste

 

Directions:  Place yogurt in a bowl.  Add onion flakes and dill.  Mix these three ingredients together with a spoon.  Add salt and pepper to taste.  You can serve it immediately BUT if you put it in the refrigerator for an hour before serving, the flavors can absorb into the yogurt making it EXTRA yummy!  Store any leftovers in a container with a lid in the refrigerator, and they’ll be handy for next time.  This will last as long as the expiration date that is located on the container of yogurt.  That’s it… the way my grandmother would have made it!  In her kitchen and mine we don’t have MSG or natural flavors, calcium disodium EDTA or disodium guanylate.  And I promise you, not only will it be as (or even MORE) yummy, it will also help you drop those unwanted pounds you’ve been wanting to lose!

I found this food pyramid in a Muscle and Fitness magazine and really liked the information. I thought it would be a ready reference for anyone wanting to lose weight and be healthier.

What makes this food pyramid different than other food pyramids is that it has extra categories to really help you build muscle. You should put your focus on protein and veggies. Next, work in foods like almonds and peanut butter that are in the healthy fats group. When building muscle and trying to lose weight this helps.

Also note the 2 categories that aren’t usually found in food pyramids- Protein Supplements and Specialty Supplements. These help you get what your body really needs. To get your fill of the protein supplement section- try eating soy, whey, and egg white protein. Specialty Supplement examples would be caffeine, creatine, and fish oil. Some of these your body doesn’t get enough of on its own.The last category is called Fast Carbs which you need the smallest amount of yet some people have the largest serving.

Pay attention to what you’re eating and use the above guide as a reference.

In our busy lives we don’t always have time to go for a 3 mile run or head to the gym. What we don’t know is that we’re always burning calories from walking around the office, to cleaning your house and washing your car. These calories really add up.
